Alfalfa sprouts are a type of vegetable that can be eaten raw or cooked. Alfalfa (Medicago sativa), also known as Lucerne, is a fine, golden coloured, quick sprouting seed and probably the most well known of the sprouts. It produces a deep green leaf that has a crisp mild flavour and contains great nutritional properties. Add to salads, smoothies, sandwiches, as a garnish or simply enjoy on its own.
